


Dave's Cioppino
Ingredients:
4oz. scallops
6 shrimp
8 cherrystone clams
16 mussels, washed and debearded
1 lobster, split
4oz. squid, sliced
4oz. fresh fish (cod, halibut, bass or other)
1/3 cup fresh basil, julienned
1/3 cup Italian parsley, rough chopped
8oz. clam juice or fish stock
16oz crushed tomatoes
1 Tbsp. fresh garlic, minced
Pinch of red pepper flakes
Salt and pepper to taste
Method:
Heat oil in a skillet, add clams and lobster, split side down. Sear lobster for one minute, then remove and set aside. Add garlic,scallops,fish, squid, red pepper flakes, basil parsley mussels, tomatoes, clam juice or fish stock. Cover and cook until clams and mussels open. Put lobster back in pan, add shrimp, and cook until both are done.
Season to taste and serve hot over pasta.
Serves two.
